In this blog post, we explore the fundamental elements of wine – from the production process to tasting techniques and the correct serving temperature. The goal is to provide you with a solid foundation and a better understanding of wine, so you are well-equipped to make the right choice the next time you need to select the perfect bottle.

We take a closer look at how the journey of the grape from vineyard to bottle shapes the character of the wine, how to store wine properly, and the key factors to consider when serving wine optimally. Along the way, you’ll receive practical advice and insights that make it easier to navigate the world of wine – both at home and when visiting Copenhagen wine bars or restaurants.

To answer these questions, we have enlisted the help of our Wine Director, Christoffer Schwarz-Nielsen, who has shared his recommendations based on years of professional experience and a sommelier education.

Behind our wine universe stands our Wine Director, Christoffer Schwarz-Nielsen, who, with great expertise and dedication, has curated a selection of wines rooted in Europe’s classic wine regions. With a special focus on sustainable producers and carefully chosen vintages, he has created a wine experience that unites tradition and innovation.

Christoffer shares his expertise in this blog post and provides his recommendations on which wines complement different dishes.

How is wine made?

In its simplest form, wine is fermented grape must. After harvest, the grapes are pressed, and the must is set to ferment, where natural or added yeast converts the sugar into alcohol.

For red wine, fermentation typically takes place together with the grape skins, which provide colour, flavour, and tannins, while white wine is fermented without the skins for a lighter expression.

During the process, various additives may be used – including sulphites, which stabilise and preserve the wine so it maintains its quality for longer. After fermentation, the wine is aged either in stainless steel tanks for a fresh style or in oak barrels for greater complexity, before being bottled.

How do you taste wine?

When tasting wine, the sense of smell is actually one of the most important factors. Although we talk about the “taste” of wine, the majority of the experience actually comes from the aromas we detect with our nose. We smell directly into the glass to capture the first notes – which can be anything from fresh fruits and flowers to spices, smoke, or oak ageing.

When we taste the wine, the aroma journey continues. The aromas travel back through the mouth and throat, up into the nose, where they release even more nuances.

The taste buds in the mouth can only register five basic tastes: sweet, sour, salty, bitter, and umami. Everything else – such as berries, citrus, chocolate, or herbs – is perceived through the sense of smell. This is why it is the combination of taste and aroma that creates the full wine experience.

How do you store wine?

Wine is alive – even after it has been bottled – and proper storage is crucial to how it develops over time. To ensure the best possible ageing, wine should be kept in a place with high humidity, ideally around 70%. This prevents the cork from drying out, which could allow air to enter the bottle.

The temperature should remain stable throughout the year, ideally around 12.5 °C. Even small fluctuations can negatively affect the wine’s taste and aromas over time. Equally important is storing wine in darkness, as light – especially sunlight – can accelerate the ageing process and alter the flavour profile.

Bottles should be stored horizontally so the wine remains in contact with the cork. This ensures a tight seal and preserves the wine’s freshness.

What are tannins in wine?

Tannins are natural, bitter, and slightly astringent compounds found primarily in grape skins, seeds, and stems, as well as in oak barrels if the wine has been aged in wood. They are what give red wine its characteristic mouth-drying sensation – similar to eating an unripe banana.

In wine, tannins play an important role in providing structure and balance. They act as a kind of “backbone” in red wines in particular and help the wine age and develop over time. When paired with food, tannins help cleanse the palate between bites, making wines with pronounced tannins especially food-friendly – particularly with dishes rich in fat or protein, such as red meat or aged cheeses.

How is wine served?

Wine should be served at the right temperature to enhance its flavour and aroma. Sparkling wine is best served at around 8 °C, white wine at 8–10 °C, and red wine ideally at around 14–15 °C – cooler than room temperature so the alcohol doesn’t become too pronounced and the balance is preserved.

The right glass also makes a difference. The shape of the glass affects how the aromas are released and how the wine hits the palate. White wine benefits most from a smaller, tulip-shaped glass, while red wine often requires a larger glass that allows more room for aeration.

Some wines – especially young, powerful reds – can benefit from decanting before serving. This aerates the wine and opens up its bouquet and flavours, and in older wines, decanting can also help remove sediment.

The right temperature, the proper glass, and correct aeration can elevate a wine experience from good to unforgettable.

What is the best wine for fish?

When choosing wine for fish, it is largely about creating balance between the character of the wine and the intensity of the dish. As a rule, white wine is the obvious choice, as its freshness and acidity pair well with the delicate flavour of fish. For rich fish main courses – for example, fried or grilled fish with butter-based sauces – a rounded and complex white wine such as a white Burgundy is a perfect match.

For lighter fish dishes, especially starters, it is ideal to choose a fresher and more mineral-driven wine that can highlight the clean flavour nuances. A dry German Riesling is an excellent option.

Although white wine is often the standard choice, a light red can in some cases be a great companion. For richer fish such as tuna or salmon, or dishes with more spiced or rustic accompaniments, a juicy and fruit-forward Beaujolais or Pinot Noir can add depth and an interesting contrast without becoming overpowering.

What is the best wine for Christmas dinner?

When it comes to wine for Christmas dinner, the challenge is finding a bottle that can work in harmony with the many intense flavours on the plate – from the salty meat to the sweet red cabbage and caramelised potatoes. Often, a slightly fuller-bodied wine with ripe fruit is chosen to match the richness of the dishes. A southern French blend, for example based on Grenache, Syrah, and Mourvèdre, offers depth, warm spices, and a rounded fruitiness that complements the classic Danish Christmas table.

It is worth noting, however, that caramelised potatoes are almost impossible to match perfectly with wine, as their caramel sweetness can make even fruit-forward wines seem sharper. Therefore, it’s best to choose a wine that complements the overall meal rather than each individual component. Red wines with soft tannins and good fruit sweetness are a safe choice.

What is the best wine for vegetarian dishes?

When choosing wine for vegetarian dishes, it is important to consider the natural bitterness of vegetables, which is often enhanced through grilling or roasting. A wine with a touch of bitterness pairs particularly well, as it creates balance in the flavour profile.

A structured white wine from Friuli in northeastern Italy is an excellent choice. An orange wine can also be an exciting alternative, with its combination of freshness, fruit, and slight bitterness.

If the dish has a smoky or spicy character, a light red such as Pinot Noir or Grenache can support the flavours without overpowering the natural character of the ingredients. The key is to match the wine’s acidity, fruit, and structure with the intensity of the dish.
