A bar shaped by an international rhythm and quiet sophistication, SIR is set within Admiral Hotel’s historic warehouse along Copenhagen’s iconic waterfront. Behind the bar, the craft is approached with both respect and a global perspective. Classic techniques meet modern interpretations, and each cocktail is composed with a focus on clarity, balance, and depth. At the heart of SIR is the iconic martini trolley, serving cocktails tableside. Rather than choosing from a traditional menu, guests are invited to create their Martini in collaboration with the bartender—offering well over a thousand possible combinations.
